Not a pro chef? Don’t stress! Cooking a half chicken has never been easier. This roast chicken is great for beginners, or for cooks who want to experiment and customize the recipe!
A simple roast chicken is great for when you have vegetables to clear out of the fridge. It goes great with any side, really, but we would recommend rice or a quinoa salad. This recipe is perfect for a Sunday sit-down meal with the family, or for prepping lunches for the week. One half chicken from Peregrine Farm feeds 6-7 people!

- Cut up vegetables of your choice. Recreate our dish with diced carrots, potatoes and onions!
- Place half chicken and vegetables on a pan. Rub with olive oil, especially the breast, to seal in moisture, season with salt and pepper. Add your favourite spice mix or seasoning.
- Add a half cup of water, wine, beer, stock, or some kind of liquid. Because Peregrine Farm chicken isn’t injected with saline solution, like most commercial birds from the store, a little added moisture is essential.
- Cook at 400°F for 40-45 minutes or until the internal temperature reaches 165°F. If not in a rush, cook lower (at 325°F)and slower (a couple of hours) or until the internal temperature reaches 165°F.
